This position is responsible for conducting various analyses of in process batch samples and finished goods to ensure that quality products are being produced.


Shift: 3rd from 9:00 PM until 5:30 AM

Pay: $16.00 per hour

Position Type/Expected Hours: This is typically an 8-hour shift, but could be subject to change depending on the needs of the plant


Duties and Responsibilities:

  • Daily calibration tasks: Verification of aqua titrate, scale, Aqua lab A W, digital/fluke thermometers, and pH meter every four hours.
  • Weekly calibration tasks: CEM Smart Machine, Brookfield, and AoAC.
  • AoAC: Manual checking of salt against titration, which is done weekly if MRE cheese is running, if not it is done monthly. 
  • Specific testing, titrable acidities, salt, viscosity, fat, moisture, color and taste, hourly moisture on cheese on each sample, MRE samples every 30 minutes and twice per shift. Complete 24 and 28 hour testing. 
  • Notifying supervisors when adjustments need to be made.
  • Recording results on product lab sheet.
  • Files all paperwork in proper place as required.
  • Maintain laboratory equipment.
  • Keep inventory of any need suppliers and records order supplies
  • Record calibration results in calibration book.
  • Train other lab technicians as needed.
  • Grading of Finished Goods samples
  • Making of solutions (nitric acid solution, glacial acid/sodium solution). 
  • Stocking utensils and solutions needed for the next day, wiping down counter tops, turning off specified lab equipment.


Qualifications/Requirements:

  • High School or GED required
  • 1 year of experience preferred
  • Sensory or judgmental criteria
  • Associating with people in a professional manner
  • Routine, Continuous performance of specific job duties
  • Ability to express feelings, ideas, and facts
  • Measurable or verifiable criteria 
  • Required use of visual observation to perform required tests, operate required testing equipment, and operate electronic scales.
  • Depth perception is necessary to properly inspect products.
  • Tactile sensation is necessary to properly operate equipment
  • Smelling is necessary for product evaluation 
  • Visual acuity is necessary for equipment calibrations, requires the use of color perception to perform color-matching tests accurately. 


Physical requirements

While performing the duties of this job, the associate is required to lift, carry, and push/pull up to 50 pounds at a given time. Exposure to extreme heat and temperature change, noise and vibration, dust and ventilation, and toxic substances.  The associate must be able to stand for extended periods of time as well as walk frequently.  Bending, twisting, squatting, kneeling, and overhead reaching may are also required.
